Blueberry Spelt Hand Pies

Blueberry Filling
1 pint blueberries
2-3 tablespoons maple syrup
1 tsp lemon juice
2 cups spelt flour
2/3 cup butter
5-7 tablespoons ice cold water
1 tsp salt

Gently toss filling ingredients together and set aside.
For crust:
Whisk salt and flour together
Cut butter into flour with a pastry knife until pieces are pea sized
Sprinkle in water, 1 tbsp at at time until mixture forms as ball.
Roll out to desired thickness (1/4-1/2 inch thick)
Using a large water glass, or round cookie cutter, cut 6" circles.
Place a tablespoon or so of blueberry mix on one side of each circle.
Fold over, and press edges together with a fork. Brush tops with beaten egg, and sprinkle with sugar.
Bake until golden, about 20 minutes.

Best served warm with vanilla ice cream!
